Chunky Spicy Queso (Cheese) Dip Recipe

Sharing my quick and easy recipe that is always a hit at parties and BBQs! Perfect for Super Bowl Sunday! Hope you indulge and enjoy and pass along!

What you need:

crockpotLarge Crock pot 

Crock pot liners (for easy clean up)

linersIngredients:

1 lb. Jimmy Dean sausage, browned and drained (hot or mild depending on how much spice you like)

2 1-pound block of Velveeta cheese, cut into large cubes (I have used other brands such as HEB, Hill Country Fare, & even Dollar General; Velveeta is the best, D.G was the runner up)

 2 10-ounce cans (undrained) of Rotel diced tomatoes with green chilies (hot or original depending on how much spice you like)

*At my house we like it SPICY…so I use hot Rotel & spicy Jimmy Dean*

Directions:

Combine all ingredients in crockpot. Place crockpot on LOW heat setting. Cover with lid and heat one hour. Keep on LOW setting until ready to serve. Serves 8-10. Enjoy!

*For larger parties double up on all ingredients.

Easy Crock-Pot Broccoli Cheese Casserole

Instead of the original recipe that takes quite a bit of time to bake in the oven, I experimented with some of the ingredients, took some out, added my own, and used a crock pot instead. This recipe is always a hit at parties, potlucks, and family gatherings. It’s quick, easy, and yummy! Enjoy!

Easy Crock-Pot Broccoli & Cheese Casserole

1/2 cup (1 stick) butter
1 package (16 ounces) frozen chopped broccoli
1/3 cup milk
1 can (10 3/4 ounces) Campbell’ s Condensed Cream of Chicken & Herb Soup
1 can (10 3/4 ounces) Campbell’ s Condensed Cream of Mushroom Soup
1 can (10 3/4 ounces) Campbell’ s Condensed Cream of Broccoli Soup
1 jar (8 ounces) pasteurized process cheese sauce (like Cheez Whiz)
2 cups minute white rice
1 cup of warm water
Large Crock-Pot

Heat the butter in your crock-pot high on heat.
Stir the broccoli, milk, soups, and rice.
Bake at high heat  for about 20-30 minutes, stirring every 5 or 10 minutes until the mixture is hot and bubbling.
Then add cheese.
After its ready, set your crock pot on low or warm. Then serve. :)
