Easy Crawfish Etouffee Recipe

Being a Latina with German roots growing up in a Mexican neighborhood, who would have thought one of my favorite cuisines would be Cajun! I searched all across the web for an easy crawfish etouffee recipe. The ones that I found didn’t serve more than 4 people. With all the family get-togethers, I needed a recipe that would serve everyone enough to have a full belly.  This recipe serves about 6-8, for a smaller meal, cut ingredients in half.

Ingredients needed:

3 lbs crawfish tails (thawed)
2 large chopped yellow onions
A bundle of chopped green onions
1 cup chopped fresh parsley
3 fresh chopped tomatoes
3 cans of medium Rotel (you can use mild, medium, or spicy depending on how much heat you like.)
3 cans of Campbell’s golden mushroom soup
3 tablespoons flour
2 1/2 sticks of butter
2 tablespoons of Cajun seasonings
Salt (to taste)
Pepper (to taste)
Garlic Powder (to taste)
Cayenne Pepper (to taste)
White steamed rice

Directions:
Melt 1 1/2 stick of butter on medium high heat; add in your onions and green onions and sauté them until soft. Then add your chopped tomato, along with the Cajun seasoning. When adding salt, pepper, garlic powder, and cayenne pepper, start off with 1 teaspoon and just add a dash here and there according to taste. Cook the vegetable and spiced mixture for about 25 minutes and/or the till veggies are real soft and look smooth.

Once your veggies are done, add in your cans of Rotel. To make in add 1 tablespoon at a time of flour (add more butter if needed) to make a roux to thicken mixture. When the flour is mixed in well and the mixture is smooth, add cans of golden mushroom soup with 1-3 cups of water (depending on how thick or watery you want your etouffee) and crawfish tails. Stir the etouffee well and cook covered on medium for about 30 minutes. Be sure to keep tasting mixture and add spices (salt, pepper, garlic powder, cayenne pepper) as needed. Add the rest of the butter to pot and cook uncovered for another 20 minutes.

*As your etouffee is almost ready, cook up your steamed white rice.

Face Masks Of Oatmeal:

Here are few simple ways in which you can prepare face masks using oatmeal and apply them regularly on your face:

Deep Cleansing Face Mask:

Mix 1 tablespoon of finely grounded oatmeal with 1 tablespoon of live organic yogurt and 1 small spoon of honey. Just beat the mixture until it becomes consistent enough to spread all over. If you warm the honey it will give more consistency to the mixture. Apply the mixture on a clean face and leave it on for  10- 15 minutes. Then wash it off with warm water and see the results.

Honey And Oatmeal Face Mask:

Mix 1 teaspoon olive oil, 1 egg yolk, 1 teaspoon honey and 1 teaspoon instant oatmeal. Blend all these ingredients to make them consistent. Apply the mixture to  your face and leave it on for a few minutes. Rinse it off with luke warm water.

Oatmeal And Egg White Mask:

Mix oatmeal with one  egg white. Blend well and then apply to your face. Leave it on until it dries, which should take about 15  15 minutes. Then wash it off with warm water.

Scrubs
Oat flour can be used in face and body scrubs to buff your face for a clean, soft finish. Here’s a few real easy ones:

Mild face scrub
Mix 1 part oatmeal flour with 1 part carrier oil (such as olive), wash off with warm water. Finish with some oat milk toner.

Oatmeal body scrub
Mix equal parts of olive oil and sugar with a bit of a carrier oil. Use as a body scrub instead of soap, wash with warm water. You’ll probably not need to moisturize after using this scrub.

Dry shampoo
If you have blonde hair, ground oats is a fantastic dry shampoo. Just rub some over your scalp, and brush excess oats out with a boar bristle brush.

Oat bran bath
Put about 1 dl (0.5 cup) of oat groans or rolled oats in some cloth and tie it up to make a small bag. Put this in your bath tub or in your foot bath. Press the bag a bit until the oatmeal “milk” comes out. You can also use this bag instead of soap on your body or face. It will give a light scrubbing and cleanse your skin and pores.

Halloween Candy Leftovers

I don’t have a problem admitting I have a huge sweet tooth, so when Halloween comes around, I tend to over buy candy. Here are some useful tips to get your money’s worth when overbuying sweet treats for Halloween.

  • You can freeze candy up to a year in the freezer.
  • Buy discounted Halloween candy for Christmas stockings and parties. Most kids don’t care if their Christmas candy is orange and black or if it has silver and gold wrappers instead of red and green.
  • Use leftover Halloween candy in Christmas baking and for making gingerbread houses.
  • Use grated or chopped chocolate in place of chocolate chips in cookies. It is easier to cut candy into pieces if you freeze it first.
  • Break Butterfinger candy bars into peanut butter cookie dough.
  • Sprinkle chopped chocolates on a white or chocolate frosted cake or use them to top ice cream and cheesecake.
  • Mix leftover chopped chocolates into cake mixes.
  • When making cupcakes, decorate the tops with one Hershey’s kiss or a mini candy bar.
  • Pour some leftover candy into a basket or pretty bowl to give to someone for a special gift. Even a Christmas bag full of an assortment of candies would be a gift that would delight anyone – kids, adults, co-workers or neighbors.
  • Chop up leftover candy apples for salads to give it a kick for the kids.
  • Send a box of candy to the troops! They love receiving care packages, especially with candy.
  • Use it for birthday party goodie bags.
  • If you work at a desk or own a business, spruce up your work space with a candy jar for clients. Or stash some away in your desk for those days your sweet tooth gets a craving.

Pumpkin Oatmeal Recipe

Have some Fall for breakfast! Enjoy!

Ingredients:
2 cups quick or old-fashioned oats
3 cups fat-free milk
1/2 cup canned pumpkin
1/4 tsp pumpkin pie spice
1/8 tsp cinnamon
1 tbsp raisins
Brown sugar to taste

Preparation: Place oatmeal in a microwave-safe bowl and stir in milk. Microwave on high for 2-3 minutes. Remove from microwave and stir in pumpkin puree, spice and cinnamon. Heat for 40-60 seconds, or until heated through. Stir in raisins. Sweeten with brown sugar if necessary and enjoy. Stovetop method Bring milk to a boil in a medium saucepan. Stir in oats and cook on a medium heat for about 5 minutes. Add pumpkin and spices and stir until heated through. Stir in raisins just before serving. Serves 4. Enjoy!

Pumpkin Breakfast Casserole

Pumpkin for breakfast, anyone?

Ingredients:
10 slices white bread, cubed
1 (15 ounce) can pumpkin puree
2/3 cup white sugar
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/2 teaspoon ground nutmeg
1 teaspoon vanilla extract
1/8 teaspoon salt 6 eggs, beaten
1 cup milk 1 (5 ounce) can evaporated milk 1/2 cup chopped pecans (optional)
1 9×13-inch casserole

Directions:
Spray a 9×13-inch baking dish with cooking spray, and place the bread cubes into the dish. In a bowl, mix together the pumpkin puree, sugar, cinnamon, ginger, nutmeg, vanilla extract, salt, eggs, milk, evaporated milk, and pecans. Pour the pumpkin mixture over the bread cubes. Cover the dish with plastic wrap, and refrigerate overnight.

The next day, preheat oven to 350 degrees F (175 degrees C). Uncover and bake the casserole until the pumpkin mixture is set and a toothpick inserted into the center of the casserole comes out clean, about 45 minutes.

Pumpkin Syrup

Ingredients:
2 1/2 cups honey
1 (14 ounce) can sweetened condensed milk
2 (15 ounce) cans canned pumpkin
2/3 cup butter
1 cup strong brewed coffee
1 tablespoon ground nutmeg
1 tablespoon ground cloves
2 tablespoons ground cinnamon
3/4 cup maple syrup
1 cup half-and-half cream
1 1/4 cups hot water

Directions:
Stir the honey, sweetened condensed milk, canned pumpkin, butter, brewed coffee, nutmeg, cloves, cinnamon, maple syrup, half-and-half, and hot water together in a saucepan over low heat; simmer, stirring frequently, until the mixture is fragrant and hot, about 20 minutes. Serve warm or hot.

Spooky Halloween Party Recipes

Disgusting Diaper Dip Halloween Recipe
A tasty hummus made from black beans and chickpeas, it’s actually pretty awesome! But this is one of those disgusting Halloween recipes that’s all about presentation. And if you present this Diaper Dip right, only the bravest of your guests will be willing to try it.

Ingredients:
1 can (15 oz.) black beans, drained
1 C. cooked, drained chickpeas (garbanzos)
2 tbsp. tahini
1 tbsp. freshly squeezed lemon juice
1/4 C. chopped fresh cilantro
1 1/2 tsp. ground cumin
1 tsp. paprika
2 tbsp. olive oil
2 cloves garlic, coarsely chopped
Salt, to taste
Freshly ground black pepper, to taste
Greek yogurt or olive oil, if needed to thin

Instructions:
1. In the bowl of a food processor, combine all of the ingredients.
2. Process until smooth. If mixture is too thick, thin out with a bit of Greek yogurt or some more olive oil.
3. Transfer to a bowl and refrigerate, covered, at least an hour before serving and up to 48 hours.

Severed Fingers Halloween Recipe
You can also try a small piece of onion for the nail, if you like, but I think the yellow bell pepper gives the best impression of thick, gross-looking yellow nails. Recipe below is for one serving– just multiply to make as many as you need.

Ingredients:
3 cocktail sausages
3 triangles of yellow bell pepper
Ketchup or BBQ sauce, as needed

Instructions:
1. Bring a pot of water to a boil.
2. To make each serving of three fingers, create 3 shallow horizontal slices about halfway up each cocktail sausage for “knuckles.”
3. Boil sausages until cooked, about 2-3 minutes. Let cool slightly.
4. With a sharp knife, cut a small flat space at the tip of the sausage for a “nail.” Using a bit of ketchup, mayonnaise, or BBQ sauce, press a nail into each finger.
5. Fill a cup (in the photo it’s a plastic muffin cup, but you can use a ramekin, a little clear glass, or whatever) with a couple tablespoons of ketchup, BBQ sauce, or any other red-colored sauce. Place assembled fingers in the cup, burying the ends slightly in the sauce. Serve hot.

Tip: Heating the sauce helps keep this disgusting Halloween food from cooling down too fast.

Halloween Pumpkin Eggnog Recipe
Ingredients:
4 C. milk (I use 2%)
1 C. canned pumpkin puree
7 lg. eggs
1 C. granulated sugar
1 tsp. ground cinnamon
1/2 tsp. freshly ground nutmeg
1 C. whipping cream
1 tsp. vanilla extract
Spiced rum (such as Capitan Morgan), to taste
10-12 cinnamon sticks (to garnish)
Pumpkin pie spice, as desired (to garnish)

Instructions:
1. In a large, heavy saucepan, whisk together the pumpkin puree and the milk. Bring slowly to a gentle boil. Remove from the heat.
2. Meanwhile, beat together your eggs and sugar in a heat-resistant bowl.
3. To temper your egg mixture, pour a small amount of your hot milk into the eggs, whisking constantly. Add a bit more, whisking all the while, until your egg mixture is hot and close to the temperature of your milk mixture.
4. Slowly and gradually whisk your tempered egg mixture into your milk mixture. Return to a medium-low heat.
5. Add cinnamon and nutmeg. Cook, whisking constantly, until the mixture coats the back of a spoon. Remove from heat and stir in cream, vanilla, and rum to taste.
6. Cover and refrigerate up to 24 hours. You’ll want to let it chill for at least four hours to let the flavors combine. Garnish each serving with a cinnamon stick and a sprinkle of pumpkin pie spice.

Tip: If your eggs weren’t tempered perfectly, you may end up with a few egg bits in your nog. If this happens, simply strain the pumpkin eggnog into your Halloween party punch bowl before chilling.

Decorating: If you want to make this Halloween party punch look a little more spooky, you can add a bit of orange food coloring before you chill it. Decorate with a little bit of black-colored sugar. Serve in a punch bowl or pretty little cups. I like clear ones.

Sewer Water Adult Halloween Drink Recipe

Ingredients:
1 bottle (700mL) vodka or vanilla vodka
7 C. fresh orange juice with pulp
1.5 liters (3/4 of a 2 liter bottle) Dr. Pepper
Ice

Instructions:
1. In a large, clear punch bowl combine the vodka, orange juice, and Dr. Pepper.
2. Fill a separate container or ice bucket with ice.
3. Fill each punch glass with ice before serving. Serve with a lemon wedge if desired.

Guacamole Day Recipe

September 16, 2014 is National Guacamole Day! We all know and love guacamole as a party snack, but there’s more to guacamole than meets the eye. Guacamole is made from avocados, which are packed with more than twenty vitamins, contain “good fats” that reduce cholesterol, can help fight cancer, and can be used as a substitute for butter or shortening in baking.

You can purchase pre-made guacamole at your local supermarket or buy some ripe avocados to make your own. Cinco de Mayo, Fourth of July, Super Bowl Sunday, and Easter each account for approximately five percent of annual avocado sales. Have no fear, avocado trees produce up to 400 fruits a year so there should be plenty to go around. Happy National Guacamole Day!
